Discover the sheer depth of the culture from a fisherman who apprenticed under a sushi chef.
Experience the craft firsthand, from the techniques involved in the preparation to the graceful art of shaping the nigiri, while tasting the varied flavors of the sea bream, revealed through different cuts and cooking methods.

Sugatazukuri (Whole-Fish Sashimi Display) Experience

Watch as a fisherman expertly fillets sea bream, then try taking the block-cut fillets and slicing them with a sashimi knife to arrange them in the traditional style.
Those who wish to do so can also fillet a sea bream from start to finish.

Salt-Baked Sea Bream Experience

(For Non-"Sea to Table Plan" Visitors)
In this experience, you will pack sea bream in salt, then decorate it with commemorative messages or illustrations using egg yolk. Then, enjoy it freshly baked.
Served with rice and miso soup with sea bream trimmings.
*This experience is included in the fee for the Sea to Table Plan.

Dried Fish-Making Experience

Try soaking sea bream in salt water and drying it out in the sun.
Those who wish to do so can also fillet a fish from start to finish.
The dried sea bream can be taken home or enjoyed for breakfast the next morning.

Fishmonger BBQ

The company behind the guesthouse, Yuuei Fish Company, also sells a variety of seafood including Japanese spiny lobster, noble scallop, and oyster.

We also sell charcoal, grilling nets, and other related items.
Those staying at the guesthouse will be guided to the guesthouse terrace, and visitors to the terrace of the Ukurayama Lab.
